Cherry Cordial


This cherry cordial has been a hit in our house on these hot days. How pretty is that all natural colour?!

If you’ve been out cherry picking with us and still have some cherries in the fridge then making a batch of this cordial is an easy and yummy way to use up the last of those cherries. You can use scrappy/rain damaged cherries for this – they don’t need to be perfect. I prefer redder cherries than the really ripe ones here.

No pitting needed – I even left the stalks on!  I’ve a big batch of this cordial on the stove now that I’m making from some rain damaged (split) cherries that we’d culled out in our packing line – I popped them into the freezer until I found some more time – the freezing seems to have helped extract more juice.

Cherry cordial

1kg cherries
1L Water
5 cups Sugar
Rind of 3 oranges
5 Cinnamon Sticks
15 Cloves
4 Star Anise
2tsp Citric Acid

Wash cherries and place in a large saucepan with all ingredients except the citric acid. Bring to a boil and simmer until cherries are very soft. While simmering, crush the cherries with a potato masher or muddling stick, pressing out the juice.

Turn off heat and leave in saucepan 5-6 hours or overnight.

Strain through a colander, pressing juice out of the fruit, then stain again through a fine sieve back into the saucepan. Bring back to a boil and add citric acid. Bottle while hot into sterlised bottles.

Mix with water – still or sparkling or add to a cocktail.  Perfect for this crazy hot summer weather!
